Here’s a somewhat indulgent yet easy low carb snack recipe: Chocolate Smoothie. All extremely healthy ingredients with no grain, no added sugar. If you want to go lower carb, eliminate the orange. I have an orange tree right in my backyard, so I can’t resist πŸ˜‰ Plus, it was Valentine’s Day yesterday – this was my special treat.

I had this as dessert yesterday, but I’ll often have a smoothie in the afternoon without the cacao powder (I try to avoid all cacao & chocolate products due to the fermentation processing – I have a mold sensitivity). I’ll use a teaspoon of cinnamon or pumpkin pie spice instead. The orange is eliminated off-season. The coconut oil is optional, depending on hunger. Different berries can be substituted. Raw cream is awesome if you have a local source (replaces the oil and orange).

So you see, it’s a very flexible recipe! ‘Cause that’s the way I roll πŸ˜‰

  • 1/4 C frozen blueberries
  • 1/2 green-tipped banana, peeled
  • 1 small peeled orange
  • 2 T organic extra-virgin coconut oil*
  • 2 T organic raw cacao powder*
  • 2 raw organic free-range eggs

Place all ingredients in 2-cup glass measuring cup or similar vessel. Blend with hand blender til smooth. If it’s chilly and your coconut oil is solid, it will take a little longer. Pour into tall glass and enjoy!

    • You could go without it. It’s supposed to be really good for you – increases your metabolism – and takes good too! But you know, I’m totally flexible on ingredients!
